Udi's Gluten Free Tortillas

My kids love burritos. They love bean and cheese and they also love it when we make quesadillas and put them out for snacks for them and their friends on the weekends. The thing is, I know that when I make these things for my kids, they maybe taking in extras that are not needed. With myself preparing for a big journey on eating healthier, I know that the only way it will work is if I also get my family to eat healthier. With the regular tortillas we usually get, I know that my kids are taking in the extra, unneeded gluten, which can add extra unnecessary fats and make them more sluggish. So when I was sent some of the Udi’s Gluten-Free Tortillas to review with my family, I knew that this would be a great way to introduce a new and healthier way to eat those burritos and qusadillas that my kids love. I also know that when we embark on a healthier way of eating and getting Gluten-Free products like the different breads from Udi’s, my kids will get healthier and find themselves with more energy!!! Check out this great Quesadilla recipe using the Udi’s Plain Tortillas:

Single Serve Quesadilla
INGREDIENTS:
Udi’s Gluten Free Flour Tortilla, Large
1 tsp, vegetable oil
½ cup shredded cheese, preferably cheddar or Mexican blend.

Optional Extras:
½ cup diced chicken
¼ cup diced tomatoes
¼ cup chopped onions
1 T sliced olives
1 T diced mushrooms

DIRECTIONS:
1. Brush skillet with 1 tsp vegetable oil and heat to Medium-High.
2. Place Udi’s large tortilla in pan. Layer with a thin layer of cheese, leaving about 1/2 inch
around edges.
3. Personalize quesadilla with thin layer of optional ingredients, if desired.
4. Fold quesadilla in half and let it cook in the pan 1-2 minutes until slightly brown underneath
before turning to brown the topside.
5. Slide onto plate and enjoy!

    I haven't tried their Tortillas yet. We should be doing this for my grandson since he tool, loves things like burritos

    I have a friend who eats gluten free. I actually add gluten to my wheat flour to make a lighter bread. Go figure.

    I have not seen this in the store yet. We use tortillos alot at our house. I sometimes use them instead of bread. Its great that these are gluten free too.thanks
