With the kids back in school, as well as my husband, I find that creating dishes that are easy to put together as well as tasty, to be ideal. There is so much going on, and when everyone is at school, I find that prepping a casserole for dinner to be the way to go. I spend some of my afternoons in my garden, and it seems as though I am constantly finding zucchini that is fresh each day! So, incorporating my fresh garden treasures is important when creating a menu for the family. I am part of the Country Crock Casserole Club, and when I was sent the inspiration for this month, I was excited to start creating! Seeing the cheese grater, along with the Mexican Corn mix and the Black Beans, I right away pictured a Mexican Cornbread Casserole!

To get started, I headed to my local grocer with my Country Crock coupon for my free product, along with the gift card I was sent to purchase the rest of the ingredients that I would need for my dish. Aside from the Country Crock Light, I purchased some lean ground turkey meat, taco meat seasoning, a box of cornbread mix and a block of cheddar cheese. Once home, I put the ground turkey meat in a pan to cook, while that cooked, I cut up one of the zucchinis from my garden and I shredded 1 cup of the cheddar cheese. I then prepped the cornbread mix and followed the directions on the box, using the Country Crock Light instead of the salted butter. From there, I added the taco seasoning to the turkey meat, then mixed in the black beans, Mexican corn mix, and zucchini into the meat. Once all of that was mixed, I added the cornbread mixture to the casserole dish, then poured the meat mix evenly on top of the cornbread. I placed the casserole in the oven for about 30 minutes, as for time on the cooking cook until cornbread is golden brown. Then once I got that golden brown from the cornbread, I added the shredded cheese to the top and placed the casserole back in the oven for a additional 5 minutes. When the casserole was done, I served it up to my family, and the final test was to see what they thought of it. I think that when my kids want a second helping, that means the dish was a success! I find that dishes like this are easy, and do not take a whole lot of time to prep and cook time, and with the busy school season upon us, casseroles are always a great way to get the family together at the table after a long day to enjoy a meal together!
