Over the holiday season, from Thanksgiving until we ring in the New Year, I find that there are many times that we are getting together with friends, family, and either hosting meals or going to parties with meals being served. One thing that I have enjoyed doing over the years, that is a lot of fun, is the pot lucks, and it seems that with the holidays, we get the chance to go to a lot of fun pot lucks. When we plan for the pot lucks we go to, we like to change up our dishes, by bringing something different to each party. Finding a dish, casserole or side dish to cook up each time that is different for every party can be a lot of fun, and I enjoy finding and trying new dishes, that we might in turn add to our own holiday menus! Well to help me out with our cooking for all of the holiday parties this year, I was sent a great set of product and some recipe inspiration from Country Crock. I am part of the Country Crock Casserole Club, and the recipes we have tried over the past months from the inspirations we have been sent has been a lot of fun. For the holidays, we were sent some Panko Breadcrumbs, a Country Crock VIP Coupon, a recipe card for the Thanksgiving Family Fave Veggie Casserole and a Wusthof Classic Ikon 6″ Chef Knife along with a gift card to get the rest of the ingredients I would need to create my own version of the recipe inspiration I was given!

I used the recipe inspiration for a pot luck party we went to this year. I made a veggie, chicken, bacon and cheese casserole!
The ingredients I needed:
1 pound of chicken
4 Strips of Bacon
1 1/2 cups shredded cheddar cheese
4 carrots
2 celery
1 onion
broccoli
cauliflower
Country Crock Spread.
1 cup Panco Breadcrumbs

Set the oven to cook at 350
I cooked the chicken completely through then cubed it. I cut up the onion and melted 1/4 cup of Country Crock Spread, then added the onion and sauteed it. I then chopped up my vegetables and steamed them on the stove, once they were done, I melted another 1/4 cup of Country Crock Spread and put the vegetables in the pan for about 2 minutes. I took 4 strips of bacon and cooked those then chopped them up. Once I had the meat and vegetables cooked, I mixed the vegetables with the chicken, then put them in my casserole dish. I sprinkled the bacon bits on top of the mix, then I sprinkled the Panco Breadcrumbs on top then followed with the shredded cheese. Placed the dish in the oven and baked for about 25 minutes!
