When it comes to the fall, for me personally, I find that it is pumpkin everything season! From the pumpkin lattes, the pumpkin muffins to the pumpkin soups that the whole family can enjoy, I look forward to adding pumpkin to our menu. So when we were sent the Ninja Cooking System to review, I was not only excited to check it out and begin using it, but I was excited to have it to make some spicy pumpkin soup along with many other family meals that I can create in this amazing cooker!
With the Ninja Cooking System, I can create a variety of meals does not limit me to the slow cooker recipes, but allows me to cook the meals from those delicious enchiladas my family and I love along with roasted chicken, soups, steamed tamales, and even desserts! I also like that when it comes to the prep of dishes, that I can use my Ninja Cooking System to saute and seer the ingredients without having to take out other pans and use my stove top. And with pumpkin everything season here, I found that I could create a delicious spicy pumpkin soup, where I could saute the cubed pumpkin, onions, garlic, carrots, celery, and peppers together, then add them to the cooker with the rest of the ingredients and let them all cook to make a deliciously perfect fall favorite!
To get started with the Spicy Pumpkin Soup you will need to get your Ninja Cooking System out and get the following ingredients:
2 lbs pumpkin cubed
1 onion chopped
2 cayenne peppers finely chopped or you can use dried cayenne (1/2 tbsp)
2 garlic cloves minced
2 celery stalks chopped
2 carrots chopped
1/4 cup of cilantro chopped
4 cups vegetable stock
1 cup milk
1/4 tsp cinnamon
1/4 tsp nutmeg
1 tbsp salt
1 tbsp pepper
1 tbsp brown sugar
rosemary for garnish
roasted pumpkin seeds
sour cream
Cooking:
Saute the pumpkin, onion, peppers, celery, carrots, garlic and cilantro together. Take these ingredients and place in blender, and blend well (Ninja system suggested). Add vegetable stalk, milk, cinnamon, nutmeg, salt, pepper and brown sugar to slow cooker and mix well, then mix in the blended vegetables into the slow cooker. Set on high and let cook for 6 hours.
Serving Directions:
Ladle soup into bowl, top with a spoonful of sour cream, some roasted pumpkin seeds, and a pinch of rosemary and enjoy!
