With the new school year fixing to start up, I find that it is time to find those ideas for the kids lunches and dinners at the house. I like to seek out items that are not only great to pack in the lunches, but also easy to make, and choices that I can also enjoy at home with Wyatt during the day!
To help with making those lunch and dinner choices, I was sent some of the Tuna Creations from Starkist to review. I like that with the Starkist Tuna Creations, I can have a meal for both myself and the rest of the family, that is not only packed with protein, but is also only 110 calories. And with the Tuna Creations, we can have ready to serve up meals, that have amazing flavor, so we can use them for a variety of dishes. Like a salad, tuna and crackers, a delicious tuna sandwich, or even a grilled tuna burger!
For me, I am one who enjoys a great tuna salad sandwich, with boiled eggs mixed in. I found that I can make a quick and easy meal, that is very tasty and also filling, by adding the boiled eggs to the tuna with some relish, onion, mustard and a little bit of mayo!
Then for the dinner aspect of really spicing things up, I found a great burger recipe, with the Bolder Burger, giving a whole new look to tuna, taking the tuna we love to the grill, makes for a great dinner option for me to serve to the family! Ingredients:
2 pouches (2.6 oz) StarKist Tuna Creations®, Herb & Garlic
½ cup bread crumbs, divided in half
½ cup finely shredded Cheddar cheese
2 Tbsp. non-fat ranch salad dressing
2 Tbsp. egg substitute
2 – 3 green onions, sliced
1 Tbsp. Canola Oil
Directions:
· Mix tuna, ¼ cup bread crumbs, cheese, dressing, egg substitute, and onion in a medium bowl. Mix well.
· Form into two large patties (or 8 small ones); Place remaining ¼ cup bread crumbs on a plate. Coat each side of tuna patties with bread crumbs.
· Heat oil in non-stick skillet over medium heat. Cook patties 3 – 5 minutes on each side until golden brown.

I have never had tuna like that before but it does sound really good. I was wondering if it is not dry. I always worry about that when using tuna.
