Aside from the announcement of this amazing contest, with the holidays just around the corner, I have shared one of my favorite slow cooker, holiday recipes, using the Crock-Pot I was sent for my review! The recipe is one that I grew up with and one that is a holiday tradition in my home state of New Mexico. The recipe is for my favorite New Mexican Holiday dish of Posole!
Posole Recipe:
Ingredients:
2 tubs frozen Bueno Red Chile
2 lbs Boneless Pork Shoulder
6 cloves garlic (chopped)
salt
3 tsp ground cumin
1 lg white onion (chopped)
1 tbsp dried oregano
1 bay leaf
3 15 oz cans of hominy (drained)
Add pork shoulder, water, garlic, 1 tsp ground cumin, 1 tsp oregano and simmer for 5-6 hours
Take pork out, drain, shred then add to pot with rest of the ingredients and set to cook on low for another 5-6 hours

I have a few favorites; chicken tacos, pinto beans with ham shank, pulled pork, roast, and stew are pretty much my go-to meals for the crock pot. I keep it fired up all year – it helps the house stay cook in the summer, too.

During the cold months, I love cooking breakfast in my crockpot. Oatmeal, casseroles, bread pudding. Waking up to the smell of a warm breakfast is amazing!
