As we prepare for the guests who will be joining us this Christmas, I like to have a variety of treats to greet them with. So whether they join us for a holiday brunch or for holiday dinner, we can have delicious desserts to serve. To help with this years menu when it comes to the desserts, we were sent some Honey Maid Graham Crackers and a basket filled with other great goodies!

When we were thinking of ideas when it came to making something with the graham crackers we were sent, one thing that came to mind, that I enjoy sharing over the holidays are mini pies and tarts. So I decided that we would make some Berry Cheesecake Tarts using a graham cracker crust.

These were fairly simple to make and put together, and the end result turned out to be amazing! To get started, we bought some no bake cheesecake mix, some blueberries, blackberries, and strawberries, 4 tablespoons sugar, and 4 tablespoons melted butter.

For the crust, I set the oven at 380, we put a pack of the Honey Maid Graham Crackers in our mixer then ground the graham crackers into crumbles. Once we had the crumbs, we added the 4 tablespoons of melted butter and 2 tablespoons sugar, then mixed with a mixer. Once it was well blended and had a almost dough like texture, we formed the crusts into the mini pie pan that we have. We then placed the crusts in the oven for about 6 minutes, just to help it so it stayed together. While the pie crusts were in the oven, I mixed the no bake cheesecake.

I then took the crusts out of the oven, then spooned in the no bake mix into the crusts, and placed them in the refrigerator. While the cheesecakes were in the fridge, I got the strawberries and chopped them up.

For the strawberry topping, I mixed the strawberries with 1 tablespoon sugar and 1 tablespoon of water. Then for the mixed berry topping, I mixed the blueberries with the blackberries, along with 1 tablespoon sugar and 1 tablespoon water, then placed the toppings in the fridge as well. After about 1 hour, I took the mini cheesecakes and the toppings out of the fridge, then put the toppings on the cheesecakes and sprinkles some graham cracker crumbs over the tops, making them into Berry Cheesecake Tarts with a Graham Cracker Crust that were ready to serve!!

The end result turned out to be amazing, and I was able to serve the Berry Cheesecake Tarts for a holiday brunch with friends.     yes, these were soooo good! and my eldest loves to dip her graham crackers in milk too!! 🙂
