With the colder weather upon us, I find that it is the ideal time to get out the slow cooker and start making those dishes like soups that are sure to warm you and your family up. I like to not only serve warm soups on the colder days but also add them to our line up of dishes to serve when holiday guests are over. So like many, I like to seek out the ingredients and recipes to help being those soups together so that I can have the best ingredients to use in my recipes. Recently I was sent such a selection of ingredients when I was sent some of the Veggie Beverages from the R.W. Knudsen line up.
After looking at the beverages that I was sent I found that I could create a warm green chile chicken, tomato and carrot soup to serve and warm up my family with. With this soup we got a nice hot soup with a hint of spices that is great for having when those stuffy noses become a issue in the home. I also find that with the mix of ingredients from the juices to the fresh vegetables that we used, that I was making and serving a soup that is not only tasty but also a healthy choice as well! You can get the recipe for the soup I made below.
Green Chile Chicken, Tomato and Carrot Soup:
Ingredients needed
1 Bottle R.W. Knudsen Carrot Juice
1 Bottle R.W. Knudsen Tomato and Red Bell Pepper Juice
3 Chicken Breasts
1 Cup of Corn (taken off of the cob)
1 Cup Sliced Carrots
1 Cup of Barley
1 Cup Green Chile
2 TBSP Taco Seasoning (for taste)
1 Bag of Tortilla Chips (for optional topping)
Directions:
Take the chicken breasts and cube them. Pour the juices and all ingredients except the barley into slow cooker and mix, then set on high and let cook for 4 hours. From there add the barley to the cooker and mix well then cook for another 30 minutes. When you are ready to serve the soup, crumble tortilla chips on top of the soup then serve and enjoy!
We found the juices we were sent along with others from the line of Veggie Beverages at R.W. Knudsen to be great bases for a number of soup dishes that we can make. We also found these juices to be great for a number of other uses like for drinks and such that are great to have at any time of the year! Making the Veggie Beverages from the R.W.
