When it comes to family meals, I like to find ways to not only get creative with the dishes but also ways that make the cooking a bit easier for me. For this I like to seek out the kitchen appliances that can help to make the baking, cooking and even frying easier as well as give us healthier cooking options if I can. So when we were sent the Todd English Air Fryer to review from the Phoenix Trading Company, I was excited to check it out and start cooking!
Being that I am from New Mexico and my family and I lived in Texas for many years, we find that we miss the foods we grew up with and enjoyed. We have found that the Mexican flavors vary from region to region, and being in the PNW the flavors are a lot like the Mexican food flavors you can find in California. So when it comes to bringing some of the flavors from back home to our plates here in the PNW, I like to go with some of my favorites that I grew up with like the chicken chimichangas.
To get started with making some fresh homemade Southwestern Style Chicken Chimichangas, I headed to my local grocer where I picked up a package of raw tortillas, 3 chicken breasts, 1 purple onion, 2 tomatoes, 1 jalapeno, taco seasoning, cilantro, 1 lime, sour cream and several avocados.
To cook the chicken I boiled the chicken breasts then shredded the chicken into a pan, added 1 packet of taco seasoning with 1/4 cup water, mixed well then cooked on low heat for about 5 minutes. From there I took the raw tortillas and filled each one with two heaping spoonfuls of the chicken and sprinkled with shredded cheese. I then rolled the raw tortillas like a burrito and placed them in the air fryer. You can read the cooking directions in the photo below.
While the chimichangas were cooking I made the Pico De Gallo which you can get the recipe to in the photo above. I also took the avocados I had and sliced a few up to use as a topping option then took 2 avocados that I had not used yet, mashed them, added some of the pico de gallo to the bowl and mixed well for a guacamole to add as a topping. I also added a bowl of sour cream and shredded cheese to the topping options as well. Which in all, helped to give us that Southwestern flavor that we enjoy with the Southwestern Chicken Chimichangas I made in the Todd English Air Fryer!
I have found that with the Todd English Air Fryer, there are so many options I can go with when it comes to cooking for my family. The Air Fryer gives you a forced convection cooking and allows you to adjust heat and time as well. I like that I can cook a variety of foods from the fried foods like the chimichangas I made without using the oil, to steaks, fish, and more! I also can appreciate that it does not take up a lot of room in my kitchen, and that it uses a carbon filter which helps to reduce any odors in my kitchen.
Then when it comes to options with air fryers, I like that when I head to the Phoenix Trading Company, I can find a variety of air fryers, air fryer accessories as well as cook books. Like with the Todd English Touchscreen Air Fryer where I can get even more features such as a LCD digital display that eliminates the knobs!
