#Giveaway Adding Comfort to Mealtime with Idahoan

With the cooler weather upon us, I like to create dishes that are warm and comforting. One thing that my family enjoys is fresh hot soup. I  like finding and creating various soups to serve and, with winter colds hitting my home, I like to make soups that are not only tasty, but also help to soothe dry throats. So when I received five varieties of Idahoan Flavored Mashed Potatoes to review, I was excited to use some as side dishes for our holiday meals and some as a soup base.

So I decided to make Spicy Chicken and Rice Soup using the Idahoan Mashed Potatoes. It is very easy to prepare and is not only very tasty, but helps to soothe sore and dry throats!

To get started with this dish, you are going to want to have some 3 cans chicken broth, boneless chicken breasts, 1 cup rice, a small jar of salsa, 6 cups water, and a pouch of the Idahoan Four Cheese Mashed Potatoes.

First, cube the chicken, then add all ingredients to a large pot and stir until mixed well. Cook on high until boiling, reduce heat, and let simmer for 45 minutes. Then serve!

We did not see a need to add any other spices or salt to the soup, and also found this soup to be a easy one to put together. It has a little spice with the salsa, we used a mild one, you can use a spicier salsa depending on your tastes and likes. We found this soup as well as other great soup recipes that I came across over at the Idahoan site, to be a great way to change the way we cook soup and make for a great variety of dishes to try when it comes to the variety of Idahoan Mashed Potatoes!
