One of my favorite things about summer is the grilling! My husband and I love to grill during the summer and with July being the official grilling month, well that gives us even more excuses to grill both indoors and out! I am sure most of you have been following me on my weight loss journey, and what a journey it has been. On top of getting myself back into shape and getting into the healthy eating habits for my own gain, I have been finding ways to cook healthier for my family as well. My husband is one who uses a lot of oils when he cooks, but we all know that not all cooking oils are all that great for you, so when I was given the chance to review some of the Pompeian Olive Oil and incorporate it into our summer grilling, well I knew it was the perfect chance to try something new with the family that is a healthier approach to things.

After getting our bottle of the Pompeian OlivExtra Premium Mediterranean Blend, I decided that I would try it with grilled chicken dish. The dish I went with was a Grilled Chicken with Thai Green Curry Sauce over some white rice. This dish was a great indoor grilling dish. To start with you will need 1 lb (2-3) whole uncooked chicken breasts, thawed and cut into small strips, 3 cups uncooked white rice and 1 package Campbell’s Skillet Sauces Thai Green Curry. I grilled the chicken in a pan on my stove top with the Pompeian OlivExtra Premium Mediterranean Blend, which has Canola Oil, Extra Virgin Olive Oil and Grapeseed Oil. While the chicken cooked, I made a pot of rice using 3 cups of white rice and 6 cups of water, then let that boil on the stove until the water is all cooked in. Once the chicken was completely cooked, I added the Thai Green Curry Sauce in and let it simmer for about 5 minutes. Then, once the rice and the chicken are both done cooking, which if you time it right both will finish about the same time, you add the chicken with the Thai Green Curry Sauce on over the white rice and serve!

Aside from our Thai dish, we have found that with the Pompeian Mediterranean Blend, that it makes for a great outdoor grilling oil.     yum that recipe sounds great I have never tried that evoo before will definitely have to look for it in the store on my next shopping trip we love grilling as well

    I didn't realize they made Grapeseed oil and honestly I have never cooked using it. But I do use their olive oil and we just love it. Hungry Girl recipes are new to me though, I will have to check them out!
